Spiked Seltzer Bread

This is a foolproof biscuit like quick bread.  Great with soups or for breakfast with jelly.  I love putting a poached or scrambled egg in-between 2 pieces of bread with an avocado.

Prep Time 10 minutes

Cook Time 45 minutes

Total Time 55 minutes

10-12 servings

Ingredients

  • 3 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • 1/4 cup honey

  • 1 12 oz. can spiked seltzer (any flavor)

  • 1 tablespoon applesauce


Instructions

  1. Preheat oven to 350 degrees F.

  2. Grease a 9x5x3 inch bread pan.

  3. Combine dry ingredients.

  4. Combine applesauce and honey.

  5. Stir in applesauce, honey and seltzer all at once just until combined.

  6. Pour into pan and bake for 40-50 minutes.

  7. Check after 40 minutes.

  8. Cool for 10 minutes and then invert onto cutting board.
