Spiked Seltzer Bread
This is a foolproof biscuit like quick bread. Great with soups or for breakfast with jelly. I love putting a poached or scrambled egg in-between 2 pieces of bread with an avocado.

Ingredients
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup honey
1 12 oz. can spiked seltzer (any flavor)
1 tablespoon applesauce
Instructions
Preheat oven to 350 degrees F.
Grease a 9x5x3 inch bread pan.
Combine dry ingredients.
Combine applesauce and honey.
Stir in applesauce, honey and seltzer all at once just until combined.
Pour into pan and bake for 40-50 minutes.
Check after 40 minutes.
Cool for 10 minutes and then invert onto cutting board.
