Hot Milk Cake

My mom has been making this cake since the 60s.  It is one of those cakes that is not appealing to look at but ends up being loved by all once they take a bite.  I have given this recipe to everyone that has tasted it and they have passed it on to others.  


This is a recipe easy to whip up if you need something to bring at a potluck.


Prep Time 10 minutes

Cook Time 25 minutes

Ingredients

  • 4 eggs

  • 2 cups sugar

  • 2 cups sifted flour

  • Pinch salt

  • 2 teaspoons baking powder

  • 1 cup milk

  • 2 sticks butter

  • 1 teaspoon vanilla

  • ½ cup powdered sugar


Instructions

  1. Preheat oven to 350 degrees F.

  2. Beat 4 eggs until fluffy.

  3. Add 2 cups sugar; beat at medium speed for 3 minutes.

  4. Sift together 2 cups flour, pinch salt and 2 teaspoons baking powder and add to sugar and egg mixture, stirring it in with a wooden spoon.

  5. Heat 1 cup milk to boiling point. Turn off heat and add 1 stick butter to milk and let melt. Once melted pour immediately (do not cool) into batter. Stir in with wooden spoon.

  6. Stir in vanilla. (do not add vanilla prior to this point)

  7. Pour into 13”x 9” greased pan.

  8. Bake for 25 minutes. Done when toothpick comes out clean. Sometimes it takes longer to bake then others.

  9. Rest 5 minutes then take the 2nd stick of butter and rub over the entire cake until completely melted.

  10. Lastly sift ½ cup of powdered sugar over the cake.
