Twice Baked Potatoes as a Meal

A healthy vegetarian potato, no meat necessary.

Ingredients

  • 3 red potatoes or Yukon gold (on the larger size)

  • ½ cup 2% small curd cottage cheese

  • 3 tablespoons light mayonnaise

  • 1 chopped hardboiled egg

  • 1 teaspoon salt

  • ¼ teaspoon cayenne pepper

  • ¼ teaspoon pepper

  • 2 teaspoons dry mustard

  • 1 tablespoon fresh chives, chopped

  • 2 tablespoons shredded carrots

  • 1 whole canned artichoke heart, chopped

  • ½ cup light cheddar cheese

  • 1 mushroom chopped

  • 1 or 2 plum tomatoes, deseeded

  • ½ teaspoon paprika

  • 6 tablespoons of shredded cheddar cheese for topping potatoes

Instructions

  1. Preheat oven to 375 degrees F. Prick potato with for and bake 45 minutes until fork tender.

  2. When potato is cool enough to handle, cut in half and scoop out the innards within ¼ inch of skin, mash innards in a bowl.

  3. Add cottage cheese through mushrooms, mix. Divide evenly among potato shells. Slice tomato and place on top of each potato half.

  4. If you like sprinkle extra cheese and dust with paprika.

  5. Put back in oven and bake 25 minutes to warmed through.
