Egg Salad for One

This is a very flavorful and healthy way to eat your egg salad.  Do not be afraid to eat bread.  If you cannot make your own, then buy sour dough bread or another bread fresh from the grocery store bakery.

Total Time 20 minutes

Servings 1

Ingredients

  • 1 egg

  • Squirt of yellow mustard

  • 1 tablespoon of avocado

  • 2 teaspoons light mayonnaise

  • 2 stalks of chives, chopped or cut with scissors

  • 1 teaspoon capers

  • ½ stalk celery, chopped

  • Salt & pepper to taste

  • Good roll or English muffin


Instructions

  1. Put egg into small saucepan and cover with water. Set on burner with high heat to boil egg. Once water starts to boil; turn off heat and let sit for 12 minutes.

  2. Drain water and run egg under cold water while you crack and peel.

  3. Chop egg in small bowl; add avocado, mayonnaise, mustard, salt, and pepper. Mash avocado while you mix.

  4. Add chives, capers, and celery.

  5. Warm bread and fill.
