Salmon Tacos with Apple Salsa
I found this odd combination and my family was skeptical but sold once they ate it. It has become one of my daughters favorite meals and it is really easy to make.
Sweet Chili Sauce is in the Asian section of grocery stores. Also, Trader Joes carries it.

Ingredients
1 bottle of sweet chili sauce
4-6 oz individual pieces of salmon, skinned
Rinse and dry salmon. Place on aluminum foil lined rimmed baking sheet. Brush with the sweet chili sauce and broil for 9 minutes. Remove from oven and allow to rest.
2 green onions, sliced
1 cup shredded green cabbage
1 gala apple, peeled (or keep peel on) and cut into matchstick pieces
1 grated carrot
2 packets of Trader Joes corn tortillas with wheat (they have a little wheat in them)
2 tablespoons lemon juice
2 tablespoons lime juice
4 tablespoons honey
1 teaspoon salt
¼ teaspoon pepper
¼ cup cilantro
Instructions
In bowl, combine green onions, cabbage, apple, ¼ cup cilantro (reserve the remainder cilantro for garnish) and shredded carrot; toss.
In small bowl combine lemon and lime juice, honey, salt and pepper; mix. Toss into cabbage mixture.
Warm tortillas in microwave or oven. If microwaving, wet paper towels and microwave 4 at a time for 30 seconds. If warming in oven, heat oven to 350 degrees and place the amount of tortillas you think you will eat into aluminum foil and wrap. Place in oven for 15 minutes.
Allow everyone to serve themselves. Place a partial piece of salmon on warmed tortilla and top with coleslaw apple mixture and extra cilantro.
