Bran Blueberry Muffins

Great for breakfast on the weekends. This is a favorite among friends and family, my sister even asked for these muffins as a Christmas present one year. You can either make them 6 jumbo muffins or 12 regular muffins. If making 12 muffins, lower oven temperature to 350 degrees F and bake 15 minutes.


Prep Time 10 minutes

Cook Time 22 minutes

Total Time 32 minutes

Ingredients

  • 2 cups All-Bran Cereal

  • 1 ¼ cups oat milk or milk alternative

  • ¼ cup egg whites

  • ½ cup applesauce

  • ½ cup brown sugar

  • 1 teaspoon vanilla extract

  • 1 cup flour

  • 1 ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • 2 teaspoons ground cinnamon

  • ½ teaspoon ground nutmeg

  • 1 ¼ cups fresh or frozen blueberries (do not defrost)


Instructions

  1. Preheat oven to 400 degrees F.

  2. Combine cereal and milk; let sit for 5 minutes.

  3. After 5 minutes add egg whites, applesauce, brown sugar and vanilla extract; stir.

  4. In separate bowl add flour, baking powder, baking soda, cinnamon and ginger; stir.

  5. Combine wet with dry; stir just until mixed.

  6. Fold in blueberries.

  7. Spray 6 jumbo muffin pans or 12 regular muffin pans with cooking spray. (I prefer non-dark pans)

  8. Fill muffin cups.

  9. Bake 22 minutes.

  10. Muffins are done when toothpick has baked crumbs stuck to toothpick; but not raw. Don’t over bake.

  11. Let sit 5 minutes before releasing from pan.
