Bran Blueberry Muffins
Great for breakfast on the weekends. This is a favorite among friends and family, my sister even asked for these muffins as a Christmas present one year. You can either make them 6 jumbo muffins or 12 regular muffins. If making 12 muffins, lower oven temperature to 350 degrees F and bake 15 minutes.

Ingredients
2 cups All-Bran Cereal
1 ¼ cups oat milk or milk alternative
¼ cup egg whites
½ cup applesauce
½ cup brown sugar
1 teaspoon vanilla extract
1 cup flour
1 ½ teaspoon baking powder
½ teaspoon baking soda
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
1 ¼ cups fresh or frozen blueberries (do not defrost)
Instructions
Preheat oven to 400 degrees F.
Combine cereal and milk; let sit for 5 minutes.
After 5 minutes add egg whites, applesauce, brown sugar and vanilla extract; stir.
In separate bowl add flour, baking powder, baking soda, cinnamon and ginger; stir.
Combine wet with dry; stir just until mixed.
Fold in blueberries.
Spray 6 jumbo muffin pans or 12 regular muffin pans with cooking spray. (I prefer non-dark pans)
Fill muffin cups.
Bake 22 minutes.
Muffins are done when toothpick has baked crumbs stuck to toothpick; but not raw. Don’t over bake.
Let sit 5 minutes before releasing from pan.
