Lekvar Apple Bran Muffins
One of my children would eat anything you put in front of him, and my other child would eat nothing. This for some reason was my go-to muffin if I was desperate in getting her to eat something. And she ended up loving them.
You can either make 6 jumbo muffins or 12 regular muffins. If making 12 muffins, lower oven temperature to 350 degrees F and bake 14-15 minutes.

Servings: 6 jumbo or 12 regular
Ingredients
1 cup all-bran cereal
1 cup low-fat milk
1 tablespoon white vinegar or 1 tablespoon fresh lemon juice
1 teaspoon baking soda
½ cup lekvar (see recipe below)
½ cup brown sugar
2 egg whites
1 tablespoon molasses
1 cup flour
¼ teaspoon salt
1 peeled and grated apple
Instructions
Preheat oven to 400 degrees F.
Combine all-bran cereal, milk, white vinegar, and baking soda in small bowl. Set aside to sit for 5 minutes.
Meanwhile in mixing bowl beat lekvar and brown sugar; add egg whites and molasses. Mix in milk and cereal mixture plus grated apples by hand.
In 3rd bowl combine flour and salt; add to wet (milk, cereal, apple) mixture.
Spray 6 jumbo muffin pans or 12 regular muffin pans with cooking spray. (I prefer non-dark pans)
Fill muffin cups.
Bake 22 minutes.
Muffins are done when toothpick comes out clean. There will be crumbs stuck to toothpick since this is a moist muffin. Do not over bake.
Let sit 5 minutes before releasing from pan.
Lekvar Recipe:
1 lb. pitted prunes/dried plums
1 ½ cups water
½ teaspoon salt
6 tablespoons sugar
Combine water and prunes/dried plums in a pan to boil for 30 minutes; stirring. Let cool.
Reserve liquid.
Place prunes in food processor plus sugar and salt and ½ cup of the cooking liquid. Pulse to form a thick paste. Add more cooking liquid if needed.
