One Pot Potato & Asparagus Soup
A healthy and delicious soup that doesn’t taste like you are eating a bowl full of asparagus. Is perfect for a light meal and enjoy it with a side of bread. This recipe is really easy, I just cut up the vegetables and potatoes and put them directly into a large pot along with the other ingredients and blend it all up with an immersion blender. It makes a lot of leftovers and it freezes well.

Ingredients
6 green onions, chopped
2 cloves garlic, minced
1 lb. potatoes, peeled and cut into cubes
1 lb. 6 oz. asparagus, cut into pieces and woody tips discarded
3 cups bone broth
2 ½ teaspoons salt
½ teaspoon pepper
5.3 oz low-fat Greek yogurt
Instructions
Spray large soup pan with cooking spray; over low heat add green onions and garlic. Sauté 3 minutes.
Add potatoes, asparagus, and broth; bring to boil. Reduce heat to simmer for 30 minutes with lid on.
Check after 30 minutes to make sure potatoes are fork tender. Once soft enough, puree with immersion blender or food processor to smooth consistency or on the chunky side.
Add salt and pepper; taste to see if more is needed.
Turn off heat and stir in Greek yogurt.
Serve with garlic bread.
