Kiffle Cookies

My Mom only likes 3 cookies.  This one plus her Nut Tassie and Shortbread Cookies.  She has been making this recipe since the early 1960’s.  It’s a pastry cookie filled with Lekvar (Prune Butter).  Yet my mom does not like Prunes but can’t stop eating these cookies. 

Needs to be refrigerated overnight


Prep Time for dough 30 minutes

Cook Time 12 minutes

Rolling Out dough and filling 1 hour

Refrigeration time 8 hours

Ingredients

  • 5 ¼ cups all-purpose flour

  • 1 lb. salted butter

  • 1 cup Crisco

  • ½ pint sour cream

  • 2 ¼ teaspoons instant yeast (1 packet). I use the Bread Machine yeast.

  • 5 egg yolks

  • Powdered sugar

  • 2 jars of Prune Butter/Lekvar or make your own


Instructions

  1. Mix yeast in 2 tablespoons of warm water; not hot.

  2. Cream butter and Crisco. Once combined add sour cream and egg yolks.

  3. Add yeast and flour. Don’t overmix.

  4. Divide into 6 balls and wrap in plastic wrap. I flatten slightly into a square.

  5. Refrigerate overnight or a couple of days.

  6. The next day roll out one of the 6 dough squares out on a floured/powdered sugared parchment paper. I sprinkle a combination of flour and powdered sugar on the parchment. Roll out to 1/8 inch, quite thin. You may need to add flour/powdered sugar to prevent sticking. In fact you will need to. So keep checking.

  7. Cut into 2 ½ x 2 ½ squares. I don’t bother making them perfect squares. They will be rolled up croissant style.

  8. Next put a heaping teaspoon of Lekvar in center of square. Spread out in straight line from one point across to the opposite point. Then roll up like you would for a croissant.

  9. Bake on parchment lined non-dark pans in preheated 350 degree oven for 10-12 minutes until lightly golden.

 

Lekvar Recipe:

  • 1 lb. pitted prunes/dried plums

  • 1 ½ cups water

  • ½ teaspoon salt

  • 6 tablespoons sugar


  1. Combine water and prunes/dried plums in a pan to boil for 30 minutes; stirring. Let cool.

  2. Reserve liquid.

  3. Place prunes in food processor plus sugar and salt and ½ cup of the cooking liquid. Pulse to form a thick paste. Add more cooking liquid if needed.
